Homemade Raspberry Pink Velvet Cake for your Little Princess’s Birthday!

No matter how grown-up she is, she will always be excited for her birthday just like any little kid (though she might not show it). For the little kid inside her, making her birthday special is what most parents keep on their priority list. 

So this is a recipe that you can bake for your little prince’s birthday and make her day more memorable. It is also the perfect way to show her how much you love your daughter. Your little princess surely loved this cake and just a glimpse of it would bring a smile from ear to ear on her face. So, if your daughter loves pink, then you can bake a pink velvet cake that makes her happiness double. 

Pink velvet cake

The cake is actually called raspberry pink velvet cake with raspberry cheese cream frosting. Yes, you read that right- it’s pink, not red velvet! Doesn’t that sound delicious? Of Course, you can order cake online on her birthday,  but let’s be honest, that cake would not be baked with the same love and affection that you have for your daughter. 

Let’s begin with the recipe.

Ingredients required:

Raspberry Pink Velvet Cake

3 c. cake flour spooned and leveled, (some more for pans)

1 tablespoons baking powder

1/2 teaspoon Kosher salt

4 cup fresh raspberries, slashed, additional for decorating

Cooking spray

4 large eggs

2 teaspoons pure vanilla extract

3/4 cup Buttermilk

2 cup granulated sugar

3 tablespoons seedless raspberry preserves

Raspberry Cheese Cream Frosting

edible flowers and meringue kisses (for decorating)

3 drops pink food coloring, optional

Raspberry Cream Cheese Frosting

1/2 cup unsalted butter 

4 oz. cream cheese (at room temperature)

1 teaspoon vanilla extract (pure)

1/2 teaspoon Kosher salt

3 c. confectioners’ sugar

1/4 cup fresh raspberries


  1. Preheat the oven to 350°F. Flour and grease cake pans 3 (8-inch). Then you mix the  flour, Baking powder, and salt in a bowl perfectly.
  2. In an electric hand mixer, on medium speed, beat in sugar and butter until it is light and creamy for approx — 1 to 2 minutes. 
  3. Now whisk in 1 cup raspberries, and beat again until smooth. Similarly add egg, one by one, beating after each addition until blended (mixture should look curdled). Last, add vanilla too. 
  4. Now, beat in flour mixture and buttermilk after reducing the speed of the mixer to low. It should be done alternatively by starting and ending with flour, just until the flour mixture is blended.   
  5. Let’s add some color to the cake. If desired, add in food colors. Now, pour batter into prepared pans equally and keep it to bake until the cake passes the toothpick test and the toothpick comes out clean. It will take approx. 23-25 minutes.
  6. Place the pan on wire racks and let it cool down for 10 minutes. After that, invert it to cool completely. 
  7. Slip in those preserves and additional 3 cups of raspberries in a bowl
  8. Place one layer on the cake plate and cover with half of the preserved mixture. Repeat the process. Now cover with the remaining layer of the cake. 
  9. Cover the top and sides of the cake with yummy frosting and finish by decorating with raspberries, edible flowers, and meringue kisses.

For frosting

  1. To prepare for frost, beat cream cheese and butter with an electric mixer on medium speed until it’s creamy. 
  2. Now add in raspberries, salt and vanilla until everything is churned (approx. 15-20 seconds). Now, finally, add confectioners’ sugar after reducing the speed of the mixer to low. Blend it properly  for about 45 seconds to 1 minute.
